POSITION BEGINS: ASAP

GENERAL DESCRIPTION: The Chocolate Maker helps to conduct and complete weekly chocolate making duties as specified by Production Manager. Works as primary support to Operations Manager and Head Chocolatier. Works as a partner to Kitchen Assistants. Ensures that basic operations run smoothly by keeping area clean and organized, and tracking ingredients and materials inventory.

PRIMARY RESPONSIBILITIES:

  1. Helps to conduct and complete weekly chocolate making duties according to the Production List.
  2. Prime steward of PK, ER, and IR space; is ultimately responsible for sustained and impeccable cleanliness, organization, maintenance, and presentation of these areas. This includes machinery in each of these spaces, including refrigerators/freezers, stovetops, ovens, appliances, enrobers, moulding stations, melters. 
  3. Ingredients and materials inventory.
  4. Committed to receiving further training.

SPECIFIC DUTIES:

  1. Chocolate making: Tempering, moulding, enrobing, bark, painting moulds, ganache, caramel, and other centers.
  2. Ingredients prep: chopping chocolate, making purees, invert sugar, roasting nuts, prepping garnishes. 
  3. Reports inventory to Head Chocolatier on weekly basis to ensure timely ordering.
  4. Assists Head Chocolatier with ordering. 
  5. Cleans as they go, as well as EOD and EOW cleaning responsibilities as outlined in cleaning checklists. 


QUALIFICATIONS REQUIRED FOR THIS JOB:

  1. EDUCATION: A culinary degree is helpful but not necessary. College degree helpful, but not necessary. Apprenticeship or long-term Internship with Professional Chocolatier.
  2. EXPERIENCE:

a. Work in a professional kitchen (dishwasher, cook, baker, chocolatier, intern, apprentice), minimum of three years. 

b. And, some sort of customer service (dealing with the public); minimum 1 year. 

  1. PERSONAL CAPABILITIES:

a. Passionate learner about food and chocolate. 

    1. An articulate and compassionate communicator.
    2. Timely, professional, engaged, team-player.
    3. Must be able to work on feet all day, lift at least 50 pounds, and traverse stairs while carrying supplies.

WORKING CONDITIONS/PHYSICAL DEMANDS:  Work in a chocolate factory is a physically demanding job and all team members should be able to move quickly, lift heavy boxes and equipment (50 pounds), work on their feet all day, operate machinery (and sometimes fix it), and be educated on how to perform their duties without hurting themselves. In addition, supplies are stored in a basement that requires the ability to occasionally traverse stairs.  While the environment is friendly, there is an expectation that one has the ability to focus and complete tasks on their own, as well as part of a team.
